
Mulethi, (Licorice) मुलेठी, मुलेठी का पाउडर – Liquorice, Mulethi, Mulhathi or Yashtimadhu (Liquorice) is a bushy tree. Real licorice is yellow from the inside, fibrous, and has a mild smell. The fresh root is sweet, but when dried it becomes somewhat bitter and acidic in taste. Among the foreign imported medicines, Mishri Mulhathi is considered the best. Fresh licorice contains 50 percent water, which remains only 10 percent when dried. Its main component due to which it tastes sweet, is Glycerin is present in the form of glycyrrhizic acid. It is 50 times sweeter than ordinary sugar. It has pink and purple colored flowers. Its fruits are long, flat, and thorny. Its leaves are compound. Small roots emerge from the taproot. It is cultivated all over India.
Liquorice is a famous and widely available herb. Mulhathi is called Yashtimadhu due to its sweet taste and root. Its other names are Madhuka Kleetak, Jethimadh, and Liquorice. Its perennial shrub is about one and a half meters to two meters high. The roots are round, long, wrinkled, and spread.
